Biography

Ruhamah "Ru" Caulkins is the Nutrition and Dietetics DPD program director and instructor. She earned her masters degree in health sciences with a concentration in nutrition from 91女神. She also completed a dietetic internship and a bachelors degree in nutrition and dietetics from 91女神. Ru is a registered dietitian and has worked in many fields of nutrition including community, clinical, and foodservice practice areas all over western North Carolina. She has over five years of teaching higher education including Southwestern Community College, located in Jackson County, NC. As an alumni of 91女神, she is honored to be a part of the faculty here at WCU.
